Inspired by the ice wines of Canada, Ice Cyder is made from dessert apples that have been frozen to concentrate their natural sweetness. The result is a lusciously rich, intensely sweet cyder that drinks like a fine dessert wine and pairs beautifully with cheese and puddings.
Winner of three gold stars at the Great Taste Awards 2023, the judges said: "Rich colour and with rounded, ripe tropical fruit on the nose. A real flavour bomb, green apple character, mellow but sharp and zesty."
TASTE
In the glass, our Ice Cyder offers sumptuous marmalade and mandarin notes, with hints of quince and citrus blossom. Rich, but not cloying, its concentration is balanced by fresh acidity, making it perfect with washed rind and blue cheeses, creamy desserts like pannacotta or posset, or simply served with a biscotti.
THE PROCESS
Ripe dessert apples are pressed, then the juice frozen. This separates the water from the intense, syrup-like nectar, which is then cold-fermented in a cellar. After six months aging in steel tanks, it's bottled ready to drink. Serve chilled.
Spelling cider with a ‘y’ preserves the old West Country tradition, originating from a time when it was used to indicate superior strength and quality.
